Foundation of the SeyOS GmbH

The Maschinenfabrik Seydelmann KG founds a new subsidiary company - the SeyOS GmbH (Seydelmann Ohmic Systems) with headquarters in Aalen.

SeyOS GmbH, with Kevin Eberhardt as managing partner, focuses on the functional principle of the electrothermal process "Ohmic heating". This is based on the direct passage of electricity through the product. The sausage meat itself takes on the function of a heating resistor. This results in a lightning-fast heating of the entire product evenly. The energy, time and space requirements of the cooking process are reduced to a minimum.

A sausage in 100 mm caliber and 1,000 mm in length is thus heated in under four minutes over its entire length and diameter from 12°C to 72°C. The energy costs are only 20% of a traditional heating with hot water or steam and no additional water is used. In addition, the system can be operated entirely with renewable energy.

In practical application, the system allows a fully automatic and continuous process in production for large-caliber sliced products (cooked sausages and boiled ham) with a cooking time of less than ten minutes, which also requires much less space than conventional methods. The installation is carried out without extensive planning, as no steam/hot water generation and corresponding complex piping has to be considered.

The sausage are fed directly from the filler or clipper and after heating are continuously transferred to, for example, a cooling tunnel. The steep heating curve creates advantages in the field of microbiology and the uniform and rapid heating over the entire length and cross section ensures uniform moisture distribution and reduced jelly formation in the end product and a reduction in visible PSE defects in ham products. Cooking losses are greatly reduced. The use of spices and additives can be reduced while maintaining the same taste, as the product is only heated for a relatively short time. The negative influence on the temperature-sensitive essential oils and flavorings in spices, such as pepper and herbs, is significantly reduced. Energy losses due to discharged hot condensate or escaping steam are eliminated.

Extensive product tests can be carried out with interested customers on the industrial machine.

SeyOS GmbH pursues the goal of making ohmic heating available for a wide range of applications and thus making a significant contribution to energy saving and cost reduction. Research is already being carried out on further practical fields of application.
