Review: IFFA 2022

On more than 1,000 square meters of booth space, Maschinenfabrik Seydelmann KG presented visitors to IFFA 2022 with more than 50 machines and two fully automated production lines for the production of meat and meat alternatives - including many innovations and further developments.

"As the world's most important trade fair for our industry, IFFA was a complete success," Andreas Seydelmann, Managing Partner of Maschinenfabrik Seydelmann KG, sums up. "The hunger for information and social exchange after many cancelled or postponed opportunities was clearly felt and the willingness to invest in the industry remains high." 

Interest was particularly peaked by the innovations and further developments, such as the Vacuum-Konti-Kutter KK 144 AC-6, which enables entry into emulsifying with vacuum technology for medium production volumes. The vacuum function not only makes it easier to draw firm, stiff sausage meat into the cutting set, but also continuously removes air from the product during the cutting and emulsification process. This achieves higher protein extraction and fineness in the product, as well as producing longer shelf life, better flavor development and improved color stability of the product.

Furthermore, the completely redesigned and newly constructed Universal Grinder AW 300 U of the second generation was presented with higher hourly output, lower energy consumption, an even more excellent cutting pattern, and a revised and improved hygienic design. With the AW 300 U it is possible to grind fresh meat, cooked meat as well as whole frozen meat blocks without any problems with the same working worm and the same cutting set.

The Seydelmann Cutting Drum, which ensures efficient removal of hard parts and foreign bodies such as plastic particles or film residues, was also a visitor magnet. Compared to conventional cutting sets, the system consisting of a perforated drum and an extended working screw enables a higher throughput and thus a higher hourly output at a lower temperature input and is now also available in the U 200 outlet size in addition to the existing E 130 and G 160 sizes. The system operates without contact and therefore without metal abrasion. The service life is significantly longer than that of soft separators or the conventional cutting sets.

The Trolley Tumbler VTT 300 X also peaked great interest. Anyone producing delicatessen salads or vegetable mixes, or offering spare ribs, marinated steaks, chicken wings and pulled pork, encounters a major challenge: the individual components have to be processed carefully. What sounds simple is not easy to achieve. This is because particularly gentle and uniform mixing, tumbling and marinating is important. In the Trolley Tumbler, the trolley filled with the products to be mixed serves as the mixing container. Loading and emptying of the machine, as with conventional mixers or tumblers, is not necessary. This allows fast product changes and minimizes product losses. Depending on the machine design, mixing is performed by horizontal or cross rotation - if desired, also under vacuum. Simple operation and easy handling reduce personnel costs: only one person is needed to operate the machine. Maximum operating safety is ensured by the protective fence with access door and safety check and the laterally positioned and moisture-protected electronics.

The visitors' curiosity about the revised Vacuum-Cooking-Cutters from Maschinenfabrik Seydelmann made it clear that Hygienic Design continues to be a focus. Here, for example, the seal in the lid and the bowl seal are removable and readjust themselves. This simplifies cleaning and eliminates the need for time-consuming adjustment work during replacement. The pipes and nozzles of the bowl heating/cooling system are made entirely of stainless steel. The machine frame is now ventilated with positive pressure to prevent the ingress of dust or moisture. The Industrial Cutters K 206 and K 556 were also introduced as a new generation of machines. Here, too, the focus is on Hygienic Design.

In the basic version, all cutters receive the Auto-Command 1000 control system with program control for automatic recipe-controlled operation of the machines.

"Particularly when it comes to investment goods that require explanation and in an industry in which the handshake to conclude a contract is of great importance, there is no substitute for trade shows and personal discussions directly at the machine," says Andreas Seydelmann, underlining the importance of IFFA for the company and for the entire industry.
