The 4th generation - Seydelmann industrial and artisanal cutters

At IFFA, Maschinenfabrik Seydelmann presented the new generation of industrial and artisanal cutters and introduced numerous innovative new features to the market:

Hygienic Design

Polished and sloping stainless steel surfaces, recessed covers with hygienic quick-release fasteners, the entire machine body made of stainless steel, central lubrication (as a central lubrication point outside the product area or automatic central lubrication) without the risk of product contamination, recessed covers and all plastics in blue color, no screwed connections as far as possible, good accessibility to all machine areas - these are the distinguishing features of the Seydelmann cutters. The standard of hygiene in food production has been decisively shaped and established by Maschinenfabrik Seydelmann for many years.

However, to rest on achievements or to stand still is out of the question. Even if rarely soiled, the space under the bowl was previously difficult to clean. With the introduction of the new, large cleaning hatches on all cutters, accessibility all around has been made possible. Without compromising the rigidity and thus stability of the machine frame, these allow easy access and thus fast and ergonomic cleaning.

With the vacuum cooking cutters, this goes one step further. The metal detectable seal between the bowl and the machine stand, which can be removed without tools, allows additional accessibility for full cleaning with steam jet and co. The seals in the main lid have also been completely redesigned and are now removable and self-adjusting. This avoids dead space, simplifies cleaning and eliminates time-consuming adjustment work when replacing them. The seals in the noise absorbing cover have also been reworked, cannot be lost and have a longer service life. The feed lines and nozzles of the bowl heating/cooling system are made entirely of stainless steel, and the knife head seal is implemented as a centrifugal labyrinth that keeps sausage meat away from the seal. The machine stand is ventilated with positive pressure to eliminate dust or moisture ingress. A foldable discharge stand further simplifies cleaning and, on top of that, reduces the room height required for machine operation. Pickled and passivated stainless steel surfaces in the inner machine body and thus even further improved material resistance complete the picture. 

Ergonomics

With a view to ergonomics, especially in the trade, the artisanal cutters can optionally be equipped with a lifting device for the common Euronorm meat crates (e.g. E2). The containers are stacked on a trolley and moved into the lifting device. By activation via knee lever or cross switch the crates are lifted one after the other to working height. The lifting height corresponds to the crate height, which can be set individually. When activated again, the lifting device continues to rise so that the next crate can be conveniently removed at the working height. As soon as all crates have been used, the lifting device lowers and the next stack can be moved in. This improves the ergonomics for the operator elementarily - standing upright and with a straight back, the filled, heavy meat crates can be placed into the machine. At the same time, this mode of operation results in time savings.

Hydraulic product ejectors on cutters make emptying the machine much easier; these swing in and out of the bowl without any muscular effort and empty it completely.

The S24 knife system for industrial and artisanal cutters does not require any screws or clamping sets and is self-explanatory thanks to clear markings and can be installed reliably in the shortest possible time. An additional labor-saving feature is the optional quick-action clamping nut, which eliminates the need to handle heavy wrenches.  

Digitalization/Automation

The fourth generation of Seydelmann cutters receives the Auto-Command 1000 control system with program control for automatic recipe-controlled operation of the machines as standard equipment. The large-area display provides a better overview of all relevant values and can also be read remotely. Depending on the customer's needs and wishes, Auto-Command 2000, 3000 and 4000 are also available as options - depending on the control variant, this includes fully automatic operation, fully comprehensive data recording, production planning, user administration, various evaluations and connection to an inventory control system. However, the cutter is still operated via ergonomic cross or knee-switches and not via touch panels that are prone to interference.

Seydelmann cutters can be operated automatically with the new Auto-Command controls, which increases process and product safety and significantly simplifies machine operation and also reduces energy consumption.

These Industry 4.0 solutions of automatic machine controls meet the criteria of various funding programs in many cases.

Energy efficiency

In addition, Seydelmann is expanding its already energy-saving portfolio of high-performance machines to include an eco+ series geared towards consumption optimization. By using modern energy-efficient motors and frequency converters, energy savings of up to 40 percent can be achieved while maintaining the same efficiency and quality of the end product, thanks to lower connected loads and the avoidance of power peaks. This lower-energy equipment meets the eligibility criteria for subsidies.

Together with the customer and for the customer the best. With many new innovations, Seydelmann machines offer improved and more ergonomic operability for the user and a consistent and high quality of the end product.
