IFFA 2019 - Over 40 machines on display: Maschinenfabrik Seydelmann KG presents the latest automation solutions, almost its entire machine program and numerous further developments and new developments. Proximity to the customer, quality, innovation and service strength have characterized the traditional company Seydelmann for more than 175 years.

When manufacturing machines and production lines, Seydelmann uncompromisingly sets the highest standards in terms of material and technology. At the IFFA in Frankfurt am Main, Seydelmann will be presenting his "Heroes made of stainless steel" on stands A02, A05 and A06 in Hall 8 from 4 to 9 May 2019 on an exhibition area of more than 1000 m².

To keep Seydelmann's customers at the top of the market, the company is driving forward the automation of the meat industry. All Seydelmann machines are built in such a way that they can be integrated into networked and automated production. Seydelmann production lines are planned, developed and manufactured as complete solutions. The degree of automation and the interfaces can be determined individually for each customer. Each individual machine can be operated manually or the entire production line can be controlled by a central terminal.

Due to its large batches, the world's largest Vacuum-Cooking-Cutter the K 1004 AC-8 with a bowl capacity of 1000 liters guarantees unparalleled homogeneity and consistent product quality. Seydelmann vacuum cooking cutters are characterized by high blade speeds of up to 160 m / s as well as very short and energy-efficient evacuation times. Vacuum-cutting increases shelf-life and improves the bite, appearance and taste of the finished sausage. Because of the better Brat binding greater water / ice inputs are possible. The cooking function speeds up production because cooking and cutting are done in one go and preserves the flavors, aromas and proteins that are otherwise lost in the cooking water. Compared to smaller cutters, the K 1004 AC-8 can achieve significantly higher hourly output because batch-related interruptions are minimized in the shortest possible time. Continuous feeding without batch-related interruptions is possible. The need for personnel can be significantly reduced because only one machine is operated instead of the previous two (with two 500 l cutters) or three (with three 325 l cutters). The changing and grinding of the knives as well as the general machine maintenance, upkeep and cleaning now only apply to one instead of two or three machines.

The newly developed Loading Hopper enables cutters to be integrated into production lines and to achieve a virtually uninterrupted material flow. Thus, all the benefits of cutters can be used and high hourly throughput achieve.

The new Mixer-Grinder AMR 3500 has a hopper capacity of 3500 l and a mixing capacity of between 400 and 2200 kg, depending on the processed product. It delivers high performance with optimum material mixing as well as a dense and clear cutting pattern. The AMR 3500 has two mixing axes. Each of its two mixing axes has its own drive and can be switched independently. Each product can be gently and evenly mixed thanks to two different mixing speeds and directions. A quick discharge to the grinder outlet is ensured by the long feeding worm in the hopper floor, which is positioned in parallel above the working screw. It is frequency-controlled and infinitely programmable. For every consistency, the optimum product flow to the working screw can be defined. Depending on the current consumption at the main drive for the working worm and the cutting set, the intelligent controller automatically adjusts the optimum speed of the feeding worm. This allows a perfect cut through consistent pressure. By default, the AMR 3500 is equipped with cutting parts with a diameter of 300mm, but can also be supplied with an outlet diameter of 250mm. Thanks to the double-walled machine stand, in which all lines, hoses, cylinders, cooling valves and other accessories are integrated, the machine is easy, quick and safe to clean. The best possible processing temperatures for each product are achieved through the cooling function available for the Mixer-Grinder AMR 3500 and all Seydelmann Mixer-Grinders and Mixers.

The powerful Universal Grinders AU 200 U and AV 250 U present themselves in the latest generation. They can be used regardless of the starting temperature of the raw material. They mince fresh meat at the same time or separately, whole frozen meat blocks down to -25 ° C and other materials, regardless of consistency and temperature. For each material, the same working worm and the same cutting set can be used. A machine that can handle both materials is cheaper, requires less space and requires less manpower and maintenance. In addition, a universal grinder makes it possible to decide at short notice, depending on the current meat prices, whether fresh or frozen food is processed. The four speeds of the feeding worm and the six speeds of the working screw can be set steplessly and independently of each other. For each material, the optimum transfer speed is preset. Thus, with every material a gentle processing and a clear cut with the best possible output can be achieved. The frequency-controlled three-phase motor of the AU 200 U avoids inrush and switching current peaks and saves up to 25% current. The feeding worm is equipped with a removable bearing for an easy cleaning and intelligently adjusts the material feed depending on the power input of the main drive, depending on the product parameters stored in the recipe program: the pressure in the cutting set remains constant and no idling occurs. The new generation of Universal Grinders also has a higher hourly output compared to its predecessors.

Seydelmann now also offers the two-staged separating set in the W 300 size. The material is sorted out in two stages. Hard particles, tendons and cartilage are separated in the proven system and transported to the middle of the cutting set, just like a conventional separating set. There it is not discharged via an outlet device, but brought into a second, smaller grinder outlet. In this second separation set, the material is sorted out again, so that less meat and fat is discharged with the refuse while still all hard particles, tendons and cartilage are detected.

Also new to the program is the Cutting Drum for meat. This cutting system for fresh meat dispenses completely with knives or perforated discs. This results in no metal abrasion and hardly any wear. The heating of the material to be cut is at a maximum of 3 ° C. Depending on the size of the hole up to 100% cartilage, tendons, bone fragments and other foreign bodies are sorted out. The discharge of the refuse is time and pressure controlled via a pneumatic valve. Due to the low wear, a live span of up to 100,000 t is possible. The cutting system is available in a diameter of 130mm and 160mm.

The mixer MR 4700 and the vacuum mixer VMR 4700 present themselves as a new machine generation with polished machine stands and a maximum mixing capacity of 3000 kg. All cables, cables, cylinders, valves etc. are integrated in the machine stand.

For indirect cooling with water or glycol or for heating with water or steam, so-called pillow plates are now available for all mixers, vacuum mixers and mixer grinders. They make it possible to regulate or maintain the temperature during mixing. The product remains free of extraneous water and this solution is more cost effective than direct tempering of the raw material. Temperature control takes place in automatic mode via the program or recipe control.

The patented innovative cutting technology of the Vacuum-Emulsifier KK 254 AC-6 is unique in the world. The pre-cut material is sucked through a system of successive holes and inserts. However, they are superimposed contact-free at the minimum distance, so that the friction between metal and metal is completely avoided: Contamination of the product with metal abrasion is eliminated and plate wear is greatly reduced. The degree of fineness of the emulsion is determined by the number of holes and inserts used and the number and the size of holes in the plates. The vacuum function significantly extends the shelf life of the final product and allows for even more intensive material shredding, higher fillings due to greater water / ice addition are possible. The emulsion becomes even finer, more homogeneous, and absolutely foam-free. The final product is more flavorful, and gives a more resistant bite and looks fresh for longer.

The Maschinenfabrik Seydelmann KG consistently pursues the goal of transferring all the advantages of industrial machinery to the craft machines in order to make working in the sausage kitchen as efficient and ergonomic as possible. The new Lifting Device is designed for the standard Euronorm meat crates (E1, E2, E3) and an additional equipment for cutters and Grinders. The containers are stacked on a trolley and driven on in the lifting device. By activating the knee switch on the cutter or push button on the grinder, the boxes are raised one after the other to working height. The lifting height corresponds to the box height, which can be set individually. After reactivation, the lifting device continues to drive up so that the next box can be easily removed at the working height.

This improves the ergonomics of the operator - standing and with a straight back, the filled, heavy meat crates can be added to the machine. At the same time, this way of working saves time.
Once all the boxes have been used, the lifting device lowers and the next stack can be driven onto it.
If the lifting device is no longer needed, the carriage holder can be folded up. In this position it is locked and the space in front of the machine is free.
